Vegan Banana Pancakes
Yields 8 servings
- 2 mashed ripe bananas
- 4 tsp baking powder
- 2 cups almond milk
- 2 cups regular or gluten-free all-purpose flour
- Vegan butter for frying
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 tbsp maple syrup
- Mash the ripe bananas and mix them with almond milk, baking powder, and optional ingredients. Then, mix in the flour. The batter will be slightly lumpy, which is ok!
- Heat a skillet to medium and add a little (vegan ) butter. Once it's melted and begins to bubble, scoop in 3-4 tbsp of the batter per pancake. Cook until bubbles form on the top and then flip. They should be golden brown!
