Lemon Snowdrops

1 cup butter (2 sticks)
1/2 cup confectionary sugar
3/4 cup cornstarch
1 1/2 cups Sifted flour
chopped pecans

Mix the butter, confectionary sugar and the cornstarch together -- do not overbeat. Stir in the flour just until well mixed (these cookies have a "short" texture so you do not want a lot of air beaten into the dough)! Chill the dough for 1-2 hours until it is pretty firm.

Preheat oven to 350.

Remove the Lemon Snowdrop dough from fridge and roll into 46-48 balls. Place your chopped pecans on a medium size plate (or sheet of waxed paper), and place the ball of cookie dough onto the chopped pecans. Press down lightly on the ball of cookie dough with the bottom of a small glass to flatten. This will also adhere the pecans to the bottom/base of the cookie! If the dough begins to stick to the bottom of the glass, just dip the bottom of the glass VERY lightly into some flour...then, with a small spatula, carefully place the cookie on a parchment lined cookie sheet (making sure the pecans are on the bottom of the cookie).

Bake until the cookie/pecans are lightly brown on the BOTTOM only. (The top of the cookie should be very pale in color.) Remove from oven and let cool completely.

Frosting

1 cup sifted confectionary sugar
2 Tablespoons melted butter (not margerine)- cool melted butter slightly
1 Tablespoon fresh sqeezed lemon juice

Lay the cooled cookies onto a sheet of waxed paper.

Working quickly, mix the confectionary sugar with the melted butter and lemon juice in a small bowl until well combined.. Swirl the frosting onto the top of each cookie and then let the cookies rest until the frosting sets and is no longer sticky to the touch. Layer in an airtight tin with wax paper between each layer.

If desired, these can have a VERY SLIGHT dust of confectionary sugar across the cookie top just before serving to emphasize the snowy effect if desired! Be carefu l-- for the Lemon Snowdrops are delicate in taste and texture!!

The Lemon Snowdrops are a tradition and family favorite that are always included in our holiday assortment of cookies for Christmas (these cookies are also a special request of my darling 96-year-old friend at Christmastime)! This is an old recipe of my mom's...she just called them "her Lemon Snowdrops".
