This is going to be interesting.

In what's been deemed "the world's healthiest eating championship" in conjuntion with Healthy Options from Independent Health, the Kale Yeah! Kale Cup debuts on Saturday (July 9) at 2pm on the steps of City Hall.

Both national and local professional eaters, sanctioned by Major League Eating, will compete for prizes by eating as much kale salad (including olive oil, vinegar, salt and pepper) as possible. The grand prize winner takes home $2000.

And a lot of nutrients.

Raw kale, per 100 gram serving, provides vitamins A, C, and K, plus B6, minerals like iron, calcium, potassium, and phosphorus. No wonder it's a "super food".

Did you know the country's largest two-day food festival, the Taste of Buffalo, is also the first of it's kind to require all participating restaurants to offer a healthy menu option?  Healthy options were integrated to the TOB in 2007.

On a completely UNHEALTHY note, I'll be competing in the opposite version of the healthy eating challenge and throwing down on Sunday on the Culinary Stage....it's a Celebrity Burger Competition...and my recipe is anything but healthy!
