It's barbecue season...I know being a Western New Yorker, some of us grill all year round, but there have been a number of safety warnings lately on barbecuing or cooking meat at extremely high temperatures.

Grilling at high temperatures can increase your risk for some cancers but there are ways to make grilling safer...from using a marinade to turning down the heat.

  • Turn down the heat to below 325
  • Pre-cook  in the microwave
  • Marinate but not more than a few hours

I love to grill because to me it is simpler and it's outdoors and I don't mess up the kitchen. Also while grilling meat can be an issue, not the same with grilling vegetables. Kabobs are also a healthier option, and use some marinade before serving.
