Recipe: Blueberry Caramel Cobbler
On my recent trip to Wegmans, I could hardly keep my hands off of the cherries and blueberries. There is nothing better than the fruits of summer. I happily picked up a bag of cherries and a couple of blueberries and danced out of the store. I could hardly wait to get home to make a blueberry cobbler!!. Serve cold or warm with a big scoop of Hagen Dazs or your favorite rich vanilla ice cream. Top it off with a cherry!! Go ahead, splurge on the calories. It's worth it .
Ingredients
- 1/2 cup packed dark brown sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon ground cloves
- 1/4 cup apple juice
- 4 cups sliced peeled peaches
- 2 cup fresh or
- 1/2 cup chopped walnuts
- 1 tablespoon butter
- 1 tablespoon lemon juice
- caramel sauce
- TOPPING:
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 1/2 teaspoons baking powder
- Dash salt
- 1/4 cup cold butter
- 1/4 cup whole
- 1 egg, lightly beaten
Directions
- In a large saucepan, combine the brown sugar, cornstarch and clove. Stir in juice until blended. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the peaches, blueberries, walnuts, butter and lemon juice. Pour into a greased shallow 2-qt. baking dish.
- For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until coarse crumbs form. Stir in milk and egg. Spoon over fruit mixture. Bake at 400 degrees F for 25-30 minutes
- Drizzle with caramel sauce
