Trying to cut some calories?  Lose some carbs?  I "sampled" something at a grocery store and decided instead of buying their prepared version, I'd make it myself, control the ingredients and the cost! :)

This is a great rice substitute...really, it works as any starch substitute!  And it couldn't be easier!

You need:

  • 1 head of cauliflower
  • olive oil (1-2 tbls)
  • 1 large shallot, chopped
  • 3 cloves garlic, minced
  • 2 tsp butter
  • salt and pepper to taste

This is going to be the most BASIC pictorial ever, because it's SO simple.

 

Cut cauliflower into florets. Chuck into food processor (will work best with big one with feed tube, unlike mine), pulse til it's in rice-like shape/size.  Heat olive oil, saute shallots until soft, about 1 minute.  Add cauliflower, stir to coat, moving it all around the pan for about 3 minutes. Add garlic and butter, stir together and add salt to taste (cauliflower is pretty bland, so you may need more salt than you think...but keep tasting.  You can always add more, but if you add too much you can't take away!)
